Mashed broad beans with chicory or seasonal wild vegetables is one of the traditional dishes of Cellino San Marco and Salento. It comes from the rural tradition and was used at various times of the year thanks to the fact that the beans were harvested and dried to be preserved for a long time, while the chicory was collected fresh in the fields.
The beans are legumes that are part of the Mediterranean culinary tradition and are said to be one of Ercole’s favourite dishes. The Romans also greatly appreciated the beans and it is said that the name of the powerful Gens Fabia derives from this legume. They have fed local populations for generations thanks to their taste, protein content and nutritional value.
