Festival of Sheep

In July we celebrate with a festival two weekends long in Fabrica di Roma for one of the most appreciated enogastronomic events of the summer of Viterbo: the Sagra della Pecora.
A festival that allows the village, which rises 300 meters above sea level near the Lake of Vico, to celebrate its past and culinary traditions. The sheep meat is cooked in various and succulent ways and was the rich dish on all the tables of families.
In past years the festival has recorded record presences that confirm the enhancement of the local territory and its ancient traditions such as transhumance, that is the seasonal transit of the flocks of sheep from the pastures near the sea to those of the mountains and vice versa.
The great success of Fabrica’s Sagra della Pecora can be attributed to the excellent food served on the stands starting from the delicious sheep’s porchetta to get to the gnocchi to the castrato and the amatriciana. Do not miss the grilled sheep and callara (typical local recipe that still remains secret), sheep lonzino, coratella and the inevitable roast.
All accompanied by wines of local production of Tuscia and live music.
There are interesting moments to rediscover the local traditions such as the illustration by a master cheese maker, all the techniques and the small secrets of the processing of cheese and sheep’s ricotta.
The event is organized by the Municipality in collaboration with the Celebration Committee of San Matteo and Giustino.
