October is the month when you start eating polenta and in Monteflavio have dedicated a festival. Polenta is prepared according to local tradition with pork, cooked with bacon and sausage, and castrate chops.

Polenta is prepared in the characteristic “cotturi”, large copper pots, and hand-turned by volunteer “forced”. It is then served in the typical wooden “scifitti” which are then given as a gift to commemorate the festival and local traditions.
