In Anzio we celebrate the local cuisine with a party dedicated to a typical mollusk of the Tyrrhenian Sea: the tellina. It lives in colonies in not very deep sandy seabeds near the sea prairies of the seaweed posidonia.
The tellina is a mollusk very appreciated for their delicate flavor and is particularly used for sauces and condiments to be used with pasta. The flavor can be enhanced by fresh tomatoes but never too intense flavors that hide the delicate flavor.
They are also eaten raw with lemon and parsley.
