The last weekend of November in Vetralla is celebrated the new oil with a weekend of tastings and parties that end with the famous Panonti Race, dedicated to those who make the best dish.
The term ‘panonto’ comes from the word pan-anointed and indicates a slice of uta bread with sausage fat or other roasted meat. In the past, wild boars were used a lot, especially in the Tuscia area.
But it can also be a simple slice of bread with fresh oil and then it looks like the traditional bruschetta.
The race takes place on Sunday afternoons and begins with the lighting of the fires and the cooking of the meat that will then have to serve to grease the bread. At the end of the afternoon a jury decrees the winner of the race.
