Leonessa. Potato Gnocchi

 
The gnocchi are the first typical dish of Leonessa made with the famous Potatoes of the Leonessa Plateau.

The dough of the gnocchi is made by hand with boiled and mashed potatoes and with flour and egg.

They are seasoned with meat sauce or just tomato.

The dumplings are then given a sprinkling of aged sheep's cheese or Parmesan.
