The tozzetto with hazelnuts from Rocca Priora is one of the specialties of this village in the Castelli Romani and represents the dessert of the centuries-old popular tradition of the town. It is so identifying that it was presented at Expo 2015 in Milan and at the Buon Gusto fair in Turin for two consecutive years. It is a crunchy biscuit made with sugar, margarine, flour, eggs and hazelnuts. This dessert is handcrafted by creating a dough from which loaves are formed that are placed on a baking sheet and baked for the first time. When the loaves of the tozzetti have reached the right browning, they are removed from the oven and cut by hand. At this point, the small biscuits are baked for a second time to make them more crunchy and tastier. The tozzetti have played a particular role in the history of Rocca Priora wedding receptions. In fact, the bride wrapped the biscuit in a cotton napkin and gave it to the guests along with the confetti as a sign of thanks for the gifts received. Paolo del Bar Tuccio has been preparing his tozzetti for over 30 years, together with his wife and their children.
