The valleys and woods east of Rome, in that area that we can define as the 'enlarged' Aniene Valley, are rich in truffles. In Ciciliano you can find the classic scorzoni, but also black or white truffles, which are often sold at auctions in other regions of Italy.

It is possible to taste them in the restaurants of the area and in traditional local dishes and they can be found in the shops and agritourisms of the area.

The truffle is one of the excellences that is found in the woods of the Monti Ruffi surrounding the village of Canterano where you can collect the prized black truffle and the scorzone truffle.

For this excellence, the village is part of the National Association of Truffle Cities which collects all the best productions.

In the Fratelli Panzini bakery in Canterano, every day you can taste the traditional sweets and dry biscuits prepared daily in their laboratory. For breakfast, try the famous milk biscuits to be dipped in coffee.

While to celebrate some event you cannot miss the famous 'ugly but good' (brutti ma buoni), crunchy delights made with hazelnuts and almonds.

Instead, at the end of the meal, the biscuits with wine are recommended, donuts that are dipped in wine and enjoyed until the last crumb.

At Easter however, the traditional dessert is the ‘pizza cresciuta’ – ‘grown pizza’ which cannot be missing from the famous Easter breakfast.

Naturally leavened, the bread is prepared in various forms and today it can also be found enriched with natural spices.

The artisanal panettone from the Panzini pastry shop is considered one of the best in Italy and is on the Gambero Rosso guide.

The Panzini family, today represented by Moreno, Donatella, Giorgio and Lucrezia, is originally from Canterano and has opened its new laboratory in nearby Subiaco, keeping alive the pride for its roots and the love for the beautiful village in the Aniene Valley.

Proceno is a magnificent town between Lazio and Tuscany regions and it is famous for garlic and legumes.

In the territory,  different varieties of legumes are cultivated such as chickpeas, cicerchie (grass peas) and beans.

Some of these are local specialities for their characteristics of flavour and the combinations with which they are prepared in particular typical dishes.

For centuries they have constituted the fundamental food of the populace.

Proceno is part of the production area of the famous Viterbo IGP Potatoes - Protected Geographical Indication.

The Viterbo potato is a tuber rich in potassium and Vitamin C and it is used as a side dish and for the realization of the famous gnocchi.
