The olive of Gaeta is tapered, of blue colour and has a vinous flavour that is typical of Itrana varieties. It is used to produce an excellent olive oil and the famous olives in brine.

This oil was described by Virgil in the Aeneid, and reaches its commercial peak in 1400s, thanks to the trade and travel by the citizens of the Duchy of Gaeta.

Gaeta olives and oil are appreciated throughout the Mediterranean. In 1498, the Duke d'Este, Ercole I, asking the ambassador to Rome to procure the famous Gaeta olives.

In 1586 a resolution of the Gaeta Council regulated the collection, sale, storage and export of black olives.

The White Itri Olives of Formia are a kind of olive to taste whole, pickled or au naturel.

They are of the Itrana variety and collected at the start of ripening, selected manually and marinated for at least five months.

Puntarelle or jagged Catalonia Chicory of Gaeta, are popular vegetables in the area of Formia.

The taste is pleasantly bitter and tender with a crisp texture.

It is prepared by cutting and pulling the fiber which consequently 'curls'.

These vegetables are eaten fresh, seasoned with oil, salt and vinegar, garlic and anchovies.

Cisterna di Latina. Cisternese Sweet of the Buttero

The Cisterna di Latina Confectioners Association has created a dessert to pay homage to the buttero (cow boy) which is one of the symbols of life in the Pontine marshes before their reclamation.

For this dessert, poor ingredients were used that the buttero of the Pontine swamp could have had available.

Walnuts, sugar, honey, butter, cream, whole eggs, flour and raisins that are combined for this cake.

Cisterna di Latina. Mozzarella di Bufala Campana PDO

Mozzarella di Bufala PDO - Protected Designation of Origin is one of the symbols of Italy and is also produced in Cisterna di Latina by local buffalo breeders.

This stretched curd mozzarella has a particular bouquet and is obtained exclusively with whole buffalo milk.

It is produced in the southern regions of Campania, Puglia, Southern Lazio.

Cisterna di Latina. Kiwi Latina PGI

Cisterna di Latina is the Italian homeland of kiwi from the seventies when the Actinidia cultivation transformed, in just a few years, the Pontine Marshes.

It is the largest growing centre of kiwifruit in Italy with a temperate and humid climate and sandy soil rich in volcanic minerals.

The fruit has the recognition PGI - Protected Geographical Indication "Kiwi Latina".
