Ponza. Lentils

The lentils of the Pontine Islands and Ponza are smaller than traditional ones but have a recognizable flavour.

They grow thanks to the humidity of the sea which captures the flavour.

Terracina. Moscato of Terracina DOC

The Moscato of Terracina (Moscato di Terracina) is a DOC white wine and a grape native of the Latina area and one of the few aromatic grapes. 

Terracina is a city on the coast of Lazio Region and the proximity to the sea and the soil type makes the wine fragrant and particularly sought after.

4 types of wine are produced with Moscato grapes: dry, sweet, passito and sparkling.

All wines have intense floral notes, good flavor and good balance.

Monte San Biagio. Marzolina Cheese

Marzolina Cheese is the only goat cheese from local farms in Monte San Biagio.

It is deposited in the characteristics shaped "baskets" traditionally made of woven wicker, although today many have replaced them with metal shapes.

The Marzolina cheese can be eaten fresh or aged and put in oil jar, the fresh has a sweet taste while the aged has a much stronger and more intense flavour.

Its name comes from the month of March when goats produce tasty fresh milk thanks to spring and new fresh grass.

Monte San Biagio. Sausage with Coriander

The Coriander Sausage of Monte San Biagio is produced with a paste of the flesh of the whole pig to which are added natural ingredients such as salt, hot pepper, sweet red pepper, muscat wine of Terracina DOC, and coriander seeds passed through the oven to be crisper and easier to crush.

The paste rests for at least 12 hours in a wooden 'maniella' and stuffed into natural pig intestines with vegetable twine in the characteristic shape of a chain.

The sausages are then dried, hanging from rods and smoked with the smoke of mastic wood.

The sausages are then cured or preserved under extra virgin olive oil in glass jars.

The coriander dates back to the Saracen domination and was used to sublimate the taste of pork.

The pig farm was widespread due to the presence of the cork oak wood of San Vito, an oak forest originally of 7,000 hectares around Monte San Biagio.

Favette Terracina Strawberry

The Strawberry Favette of Terracina, already praised by Ovid, Pliny and Virgil, found its ideal habitat immediately after the reclamation of the Pontine Marshes.

Since the '50s, farmers have started to grow these species called Favette by the French.

Monte San Biagio. Dried Peppers

The Dried Peppers of Monte San Biagio are made using red and ripe peppers that are first passed through the oven, to remove stem and seeds.

Then they are dried in the sun on wire mesh.

They are preserved in glass jars and are traditionally consumed together with cod or as an appetizer. The dried pepper is a unique product of its kind.

Itri. Olives of Itri

The Itri olives are a basic food in local life and it is one of the most famous cultivar in Italy.

They are also called Olives of Gaeta because once they left from the port of Gaeta to reach the markets of the whole Mediterranean.

They are small and have a colour ranging from purple to beige. In the restaurants of the area they are served pickled in earthenware bowls and accompany the whole meal.

From these olives a dense, scented oil is produced that is low in acidity and of high quality.
