Pappardelle alla Garibaldina is the specialty of tMorro Reatino dedicated to Giuseppe Garibaldi.

The homage to Garibaldi and Italy is in the colours of the dish that represents Italian flag: red pasta is topped with white cream and green peas.

The effect is therefore that the colours of the Italian flag are created: red, white and green.

In Micigliano, collecting truffles is an activity that has taken place for centuries.

The first "miners" used the pig instead of the dog as an animal for research.

The truffle is an underground fungus, belonging to the genus Tuber, that accomplishes its entire life cycle underground.

The truffle is made up of more than 80% of water and mineral salts absorbed from the soil through the roots of the tree under which it lives.

The quality of soil and nature of Micigliano makes for particularly delicious truffles.

The Ciacamarini of Marcetelli are strips of handmade egg pasta, hand-rolled.

Cecamariti are seasoned with sauce or simply with the excellent extra virgin olive oil of Sabina, grated local cheese and a good handful of freshly ground black pepper.

Marcetelli. Cicolano Red Chestnut

The Cicolano Red Chestnut is grown in the Valle del Salto and Turano and Marcetelli.

It is larger than the brown and a rounded shape. Its flavour is sweet and delicate.

In the resort of Val di Vani were found the charred remains of chestnuts from the Bronze Age.

Since 1700’s the chestnut, rich in nutrients, has been the staple food for mountain populations.

In the same period its market has grown from the use of chestnut wood for the construction of buildings, for the production of wine industry vessels and other craft items.

Magliano Sabina. Extra Virgin Sabina Olive Oil DOP

Sabina Olive Oil is protected designation of oil origin (PDO - Protected Designation of Origin) and it is produced also in Magliano Sabina which is part of the Roman Sabina region.

The oil has high digestibility, with vitamins D, E, K, slight acidity and, above all, very light.

The taste is unmistakable and it was appreciated by the Romans who spoke of it in many works and writings.
