Thanks to sheep farms, Anguillara Sabazia produces various tasty cheeses including pecorino and the famous 'giuncatina', a soft cheese obtained from the first stage of cheese processing.
The name derives from the container in which the semi-liquid pasta is put which is made with rush.
The Broccoli of Anguillara Sabazia is one of the excellent local foodstuffs and is celebrated with a festival in March.

In Anguillara Sabazia you can taste excellent first courses such as pasta with lake fish sauce.
It is a handmade egg pasta topped with a sauce prepared with the flavors of the lake.
The sauce is made with cherry tomatoes and is enriched with perch and other freshwater fish.
It is prepared as a sauce by putting garlic and oil for the sauté then adding the diced fish.
Half glass of white wine is added to the sauce that cooked slowly.
Pike is a typical freshwater fish from Anguillara Sabazia on Lake Bracciano.
The fish first boiled in water and vinegar to be prepared for browning.
Then it is wrapped in a batter of eggs, pepper, salt, flour and breadcrumbs.
At this point it is fried and can be eaten both cold and hot.
In Bagnoregio, Colli Etruschi Viterbesi wine is mainly produced from native varietals such as the Grechetto, the Violone and the cannaiola. This is a very old vine that was cultivated already before the year one thousand.
